Oaxaca, a place that has seen the history of humanity evolve.
Oaxaca is a special place where different climates meet: dessert weather, mountain high cold, riverside mild, jungle hot and humid. In the same way, different languages, colors, ingredients, smells, dishes and flavors meet. It is a place in which, since times gone by, people meet in the marketplace.
Markets are busy and loud
Gilled with people coming from all 8 regions of Oaxaca wearing their traditional clothes, bringing the food from their region and their pre-Hispanic languages. The markets are a melting pot of gastronomic tradition. There, chocolate, aguas frescas, nieve and quesillo can be found, as well as tasajo and spicy cecina in the pasillo de humo or hall of smoke. The history and evolution of tortilla can also be appreciated in the markets where ‘blandas’, ‘tlayudas’ and ‘totopos’ can be found. Tropical fruits are a staple products in the markets, where it is possible to enjoy different varieties of mangos, Chico zapote, black zapote and mamey. A big variety of avocados can also be found in markets: avocados which are eaten with their shell, avocados that can be squeezed like silk and are silkier than silk itself. Chapulines, or grasshoppers, a staple of Oaxaca markets, are full of color and flavor and the most adventurous of palates aren’t able to resist them.
Oaxaca is more than a place in a map
It is a place where time and space meet showing, proudly, it’s different cultures and heritage like in the archways in the zocalo, and the olives in the mole; the city center and its geometrical arrangement, the cinnamon in the chocolate, the anise in bread and it’s more than 500 ways of making a tortilla.
